So, awhile ago I had a lovely cold and decided that I needed to make some chicken soup. I rarely make it, so I asked Emmy to e-mail me a step-by-step guide. Here is what she sent me:
about 4 large carrots (it should be the majority veggie), chopped
1 medium onion, chopped
2-3 stalks celery, chopped
2 larges garlic cloves, minced
2 chicken breasts (or however much you want)
Entire container of chicken broth
chicken flavoring (if needed)
lemon juice
Optional: a couple small potatoes cut in small cubes, or mom likes to grate them
Using a large soup pot, put some olive oil in the bottom, allow to warm up on medium-ish, then add the carrots first (b/c they take the longest to cook). Give those a good 5er in the pot, then add the celery and onion. Once the onion has begun to soften, add the delicious garlic.
If you decided to use potatoes, now would be a good time to toss them in. Once that has cooked for another 5er, add the broth until it's a couple inches above the veggies. (leave room for the chicken that will be added later!) Put the cover on and let it sit and think about how delicious it's about to become. Meanwhile, in a medium-sized fry pan, put some oil in the bottom and heat it on medium...add appropriate amount of chicken....season said chicken if desired (salt, pepper,...rosemary?)...and allow to cook. Once it is done cooking, chop it into considerate, bite-size pieces, and gently place in the aforementioned soup (careful of getting splashed!). If you haven't thought to do this already, now would be a good time to taste the broth...how is it? A little bland? I thought so. Try adding a couple splashes of lemon juice (several spoonfuls). If you want to use the chicken flavoring (buillion?), now would be the time. One cube at a time...smash it into a ladle-full of broth, and mix it around. How does it taste now? Pretty good, huh? Bon apetit!
She's adorable.
